Le Montrachet proposes a cuisine that is both delicious and refined. The chef, Romain Versino, is very much in line with the grand tradition of Burgundian gastronomy. Dishes which are made to accompany the best bottles from the region's vineyards.
Romain Versino, chef, goes straight to the heart of things. The cuisine he adheres to is refined, rigorous and spontaneous. He takes immense pleasure in working with local and regional products. For example Charolais beef, Bresse chicken or pike-perch from the Saône. His excellent relationship with an organic vegetable producer in Beaune guarantees a supply of a wide variety of fresh, tasty vegetables.
Sophisticated contrivances are not part of the cuisine at Le Montrachet. Authenticity and the taste of good things are the hallmarks of each dish. This is the best way of ensuring that they match the natural finesse and elegance of Burgundy wines. The a la carte menu changes with each season and the set menus are reviewed every month. Only the set lunch menu (34€) is changed each month. The others (69€ et 110€) change with the seasons.
A loyal team - many employees have been here for more than ten years - is on duty for guests. Professionalism, efficiency and a good sense of humour are the essential ingredients of their day-to-day life.
The dining rooms are another of Le Montrachet's strengths. They are exceptionally spacious and the limestone walls, high ceilings and wooden beams create a warm, calm atmosphere. This means that each guest is quite naturally in the best possible surroundings in which to taste the chef's cuisine.
In warm weather, the terrace is a paradise.
Guests
can also enjoy wines from our wine list, served by our sommeliers. Our three
sommeliers have selected wines from the most prestigious winegrowing estates in
the Côte de Beaune and the Côte de Nuits as well as from Burgundy in general. Other
regions are, of course, also represented. 'Bon
appétit et large soif!' as we say in Burgundy.
